High Protein Paleo Sweet Breakfast Scramble

Have y’all tried the egg/banana/nut butter combo that’s so popular in the paleo world right now? I am by no means paleo, but this combo is delicious! I know it sounds weird. Just trust me, mmkay?



I made this for breakfast on Saturday, and it was de-licious. Even my boyfriend's dog Charlie agreed but did not appreciate being woken up to hear about it.

Give me chicken or let me sleep, woman!

I based my recipe off this one from Carrots ‘n’ Cake but tweaked it a bit as you can see below. My recipe is not strictly paleo if you include the cottage cheese, but you could easily omit it. If you do, I would suggest replacing the cottage cheese with an additional tablespoon of nut butter to give it some extra staying power.

High Protein Paleo Sweet Breakfast Scramble

Ingredients:

  • 1 mashed, ripe banana
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp coconut oil
  • 1 tbsp nut butter (I used almond butter, but peanut butter would work too if you don’t care about the recipe being paleo)
  •  ½ cup cottage cheese
  • 1 packet stevia

Directions:

1. Add mashed banana, eggs, cinnamon and vanilla to a bowl or cup (preferably something with tall-ish sides to prevent spills). Mix well.
2. Coat pan with melted coconut oil and add batter.
3. Cook on medium heat until eggs are no longer runny, stirring frequently.
4. Mix cottage cheese and stevia in a jar or bowl (I used an old nut butter jar).
5. Pour cooked batter over cottage cheese, top with nut butter, mix, and enjoy.

Not only is this recipe delicious; it includes the perfect mix of protein, fat and healthy carbs to keep you full until lunchtime. If you include the cottage cheese, this recipe has 30 grams of protein! And if you replace the cottage cheese with a tablespoon of nut butter, it still has 19 grams. Not too shabby.

On a somewhat-related side note (related since this post references dogs and eating), you have to check out this hilarious video of dogs dining out. My equally dog-obsessed friend sent it to me this morning, and it's hilarious. I love how impatient the dogs are for their waiter to come to the table. So bossay!


Dogs are life, the rest is just details. Word.
